The Mapping tab provides high-level options to control the look and feel of basemaps, packages, and labeling. Here, you also create Geodatabase Regions for electric feeders or gas regions and schedule how often they update.
The Mapping tab is where you point to your feature services, but you cannot change feature class symbology, as that symbology is controlled by the service itself. To change those symbols, edit the underlying map and re-publish the feature service.
